  • ¼ cup softened margarine
  • 3 tbsp. Sugar
  • 1 large egg white

  • 1 ½ cups all-purpose flour, sifted
  • cooking spray
  • 3 tbsp. No sugar added rasberry fruit spread

Directions:

  1. Preheat your oven to 350 degrees farenheit.
  2. Cream margarine and sugar until they are light and fluffy in a large bowl.
  3. Add the egg white and vanilla. Make sure to beat them well.
  4. Stir it in flour in 2 parts.
  5. Form dough using your hands into a ball then wrap in plastic wrap and let it chill for 30 minutes.
  6. Shape dough into an inch of balls. Place 2 inches apart on a cookie sheet that has been lightly coated with cooking spray.
  7. Use your thumb then press a hole in the center of each cookie.
  8. Bake for 8-10 minutes until they are golden.
  9. Spoon ½ tsp. Of the rasberry fruit spread into the center of each cookie.

Frozen Strawberry Pops

Ingredients:

  • 8 large ripe strawberries, hulled and cut into quarters
  • 2/3 cup frozen pineapple juice concentate, slightly thawed
  • 2 8 oz. Cans sugar free lemon lime soda

Directions:

  1. Place the strawberries in your blender or food processor.
  2. Add the pineapple juice concentrate and pulse until smooth.
  3. Stir the sugar free soda until well-blended.
  4. Pour mixture into 8 6 oz. Paper cups.
  5. Freeze for 30 minutes then stick a clean wooden stick into the middle of each pop.
  6. Freeze overnight
